The History Of Nicaragua’s Unmatched Rum

Nicaragua is known for its fantastic culture, landscapes, and of course, its rum industry. Being awarded for it many times, Ron Flor de Caña is a national pride. However, if you want to know more about it, you’re at the right place. Everything started in 1875 when Alfredo Francisco Pellas Canessa immigrated from Genoa, Italy, to Nicaragua.

In 1890, he established the San Antonio Mill, one of Nicaragua’s longest-running and largest sugar mills. Younger rums were concocted here to commemorate the annual cane harvest, while a small number of aged rums were created exclusively for mill administrators.

Founded in Chichigalpa, Nicaragua, Compañia Licorera de Nicaragua (CLN) quickly established itself as a leading distilling operation for San Antonio – creating aged rum on a large scale. If you want to learn more, keep reading!

Single Estate Volcanic Rum

The outstanding Flor de Caña rum is a Single Estate-style produced entirely at Compañia Licorera de Nicaragua. From sourcing the raw materials to maturation and bottling – each stage of production happens here! Situated just five miles from the majestic San Cristobal volcano (the tallest and most active in Nicaragua), standing 5,725 feet high (1,745 meters), it’s easy to see why this place produces such an exquisite spirit.

The volcanic climate of San Cristobal has been a blessing for the land and water. The volcano’s 30 eruptions dating back to the 16th century have enriched soil with ash and minerals infiltrating underground reservoirs, transforming it into an oasis. Furthermore, this hot environment also contributes to aging rum as it interacts with oak barrels in ways not possible elsewhere.

Production

Ingenio San Antonio, a company-owned sugar plantation in Chichigalpa, expertly grows and processes sugarcane into molasses. Tankers transport this sweet treat to the distillery for further enhancement. It’s diluted with water until just the right sweetness level is achieved. Then, during fermentation, which takes 36 hours, carbon dioxide emitted by the process will be collected and sold to Coca-Cola bottling plants!

Distillation

Flor de Caña is still distilled multiple times in a steam-powered five-column, with the sugar mill’s biogas providing fuel. Depending on which columns are combined during distillation, each expression can achieve either lighter or heavier grades of rum. The column ensures that most of the flavor comes from maturation within barrels rather than from production alone.
